I’m becoming more and more aware of what I put in my body. I noticed a shift of diet when I started working a lot more. I wasn’t eating as healthy as I normally do. I noticed that I was skipping breakfast which is essential for everyone and so important to jump start your metabolism and fuel your body for the day. With that being said I decided to take action and make improvements in my daily life. I”m eating breakfast everyday and not just a bagel with cream cheese. I’m making sure that I incorporate healthy choices into my daily diet. One of those recipes has been chia seed pudding. I like to make it for breakfast. It’s healthy to eat, fresh and delicious.
Ingredients
- 3 tbs chia seeds
- 2 1/2 cups of unsweetened almond milk or coconut milk
- 1 pinch of grounded real vanilla or organic vanilla extract
- 1 scoop of vanilla protein
- Diced kiwi, strawberries and bee pollen to top.
Recipe
Mix chia seeds and almond milk together in a mason jar or bowl. Let set in the fridge covered for a few hours or overnight. Stir the mixture after 2 hours and add more milk if needed. You want the chia seeds to really swell and become almost like a gel. Garnish with your choice of topping. I decided kiwi and strawberries with a bit of bee pollen. I hope you enjoy this recipe.
