Cooking breakfast on the weekdays may seem like a drag… especially if you have to wake up early for work. But you can’t keep the first meal of the day on the back burner. Eating a wholesome, nutritious meal is extremely important. It will help you recharge your brain and body, and you’ll be more efficient the rest of your day. So remember to eat up!
One of my favorite breakfast meals to cook are pancakes! Below I have shared a tasty Gluten-Free recipe of my Berry Pancakes. Bon Appétit!
Gluten-Free Berry Pancakes
1 cup of Pamela’s Baking/Pancake Mix (This is the Gluten-Free, and Wheat-Free pack)
1 large egg
¾ Cup of water (I like to use soy milk as a substitute for water)
1 TBSP oil
1 cup of berries (I used blueberries, strawberries)
Sprinkle with powdered sugar
Sprinkle with powdered sugar
This will make a total of four medium size pancakes. If you’re cooking for more than two double or triple the recipe!
